Mutton Soup Pulav recipe

A quick and easy rice recipe cooked in spiced mutton broth

Ingredients

For the mutton broth

  • 1/2 kg mutton pieces cleaned and marinated with salt
  • 2 tbsps oil sunflower or coconut
  • 3 onions finely chopped
  • 4 tomatoes medium sized
  • 6 green chillies finely chopped
  • 2" piece ginger finely chopped
  • 7 cloves garlic finely chopped
  • 7-8 peppercorns
  • 1/2 cup coriander leaves chopped
  • 1 tsp turmeric powder
  • 1 small lemon juice freshly squeezed
  • salt as required
  • 5 cups water

For the Pulav

  • 3 cups basmati rice
  • 1/2 cup ghee
  • 5 pieces cinnamon
  • 6 cloves
  • 5 green cardamoms

Instructions

For the mutton broth

  • Pour 2 tbsps oil in the pressure cooker or pot
  • Add the onions, ginger, garlic and green chillies together. Saute till lightly brown and the raw smell is gone.
  • Add tomatoes and saute well till they're mushy
  • Add the turmeric powder
  • Then add in the rest of the broth ingredients- coriander leaves, peppercorns, lemon juice and salt and mix well.
  • Add the mutton pieces
  • Pour in now 5 cups of water. Mix well.
  • Close the pressure cooker and cook for 3 whistles or till mutton is cooked
  • Separate the mutton pieces from the broth and keep the soup or broth aside.

For Pulav

  • Wash rice. Soak for 20 mins and then drain the water
  • Take 1/2 cup of ghee in the pressure cooker
  • Add the cinnamon, cloves, cardamoms and fry
  • Add the rice and fry for a while.
  • Add enough salt and the soup or broth we kept aside
  • Close the cooker and cook for 1 whistle. Remove from the flame.
  • After 5 minutes, remove the lid and stir in the mutton pieces. (The rice will not be sticky because of the mutton broth)

Notes

  • You can make the recipe with chicken or beef as well.
  • You can avoid the spices if you don't prefer them.
