This easy donut bites no yeast recipe is just what you need to make your occasions brighter!
All through my childhood, I thought that the delicious doughnut or donut was bite-sized because it was the size, my mum used to make. Every Christmas, with all her other bakes she would make a large batch of these, for us to relish and enjoy through the season.
It was only when I grew up and “Mad over Donuts” came around, that I realized that the market donuts were big in size and very sweet in taste. Ofcourse I loved them too (have you eaten their signature donut- choco bomb??? yum!) but I always looked forward to Christmas at home and these donuts in particular.
Why I preferred mums? One they were mums (duh!), two they were bite sized (I could eat how much ever I wanted and not feel full), three they were crunchy and less cakey, unlike the market donuts.
So this time in our first Christmas together in Bahrain, I decided to take up my mum’s tradition of making a batch for the family. Steve joined me in this bake and we had a great time cooking the donuts from scratch. He also got to revise the different types of shapes too, although we finally stuck to circles!
Easy donut bites recipe
Ingredients:
- 3.5 cups refined or all-purpose flour (maida)
- 2 eggs
- 4 tsps baking powder
- 2 tbsps unsalted butter (melted)
- 1.25 cups powdered cinnamon sugar (Powder 6-7 cinnamon sticks, each of 1” size, with sugar)
- 1/2 cup warm milk
- Sunflower or Canola oil for frying
Method
In a large bowl, pour the melted butter and add the cinnamon sugar. Mix with a whisk or with the help of a hand mixer with paddles attached.
Next, add milk and eggs and mix.
In a separate bowl, sieve the refined flour along with the baking powder and mix.
Add the flour mixture in to the first bowl and blend for a few minutes till it starts looking like a dough.
Knead the dough lightly, into a smooth ball. Add more flour if it is too sticky, add little warm milk if too dry.
Keep aside for 15 minutes,covered.
Take the dough from the bowl and roll it out thick (1/2 “), on a lightly floured surface.
Cut out as many rounds as possible with the help of a glass (for the outer circle) and a bottle cap (for the hole in the center).
Heat a heavy pot with oil that is 2″- 3″ deep. Test a small piece of dough with the oil. If it sizzles as soon as it touches the oil, then it means it’s ready.
Fry the donuts 3-4 at a time till they puff up and are golden brown in colour. Turn them over in between. Make sure the heat is consistent else adjust the temperature accordingly.
Toss them on to paper towels and serve warm with a chocolate sauce dip or roll them on some more cinnamon sugar.
A few more tips
- The dough will be a little sticky since it contains sugar but should be smooth enough to be rolled out easily.
- To reserve for later, pack the donuts into an air tight jar or a zip lock bag.
