This soup is beautiful not just because of it’s bright green colour but also because it tastes so delicious!! Who knew a combination of greens could taste this good too! It is made with a mix of green vegetables and a few spices and makes a great appetiser.
If I’m looking to lose some weight, I sometimes make it a complete meal by adding a ladle full of cooked millet, which again is healthy and fibre-rich.
Why is it called a green soup?
We call it the “green soup” at home because it reminded us of the “green chutney” that we Indians often use as a sauce. This soup is green because of the good presence of green leafy vegetables like spinach, coriander, mint, spring onion shoots. But the base of the soup is made with bottle gourd (which is again green).
Health benefits of the fibre rich green vegetable soup
Keeping a diet filled with rich green leafy vegetables offers numerous health benefits because they are not only low in calories but packed with vitamins, minerals and fibre.
Spinach is great for adding vitamin K, A and manganese. In fact it is a great source of folate which plays a key role in red blood cell production and the prevention of neural tube defects in pregnancy.
Coriander is rich in vitamin K (helps in blood clot), antioxidants (removes free radicals from the body), vitamin A (promotes eye-health), vitamin C (boosts immunity) and is also considered a diuretic that helps flush out extra sodium from your body.
Spring Onion shoots contain high levels of vitamin C and are a good source of vitamin K and folate. Their sulphur and quercetin components keep blood sugar levels in control and reduce the risk of cancer.
Although I’ve used only a few leaves of mint in this recipe, it is a great source of fibre, antioxidants, vitamin A, iron, folate and manganese.
Bottle gourd has always been the most recommended by dieticians and doctors because of their amazing ability to aid weight loss and improve digestive health. They are rich in vitamin C, vitamin B3, B5, B6 and minerals such as calcium, iron, zinc, potassium, manganese, and magnesium.
This soup is ultra-amazing because it is vegan, gluten-free and diabetes friendly!!

Recipe for fibre-rich green vegetable soup
Fibre-rich green vegetable soup
Ingredients
- 1 big bottlegourd peeled and roughly chopped
- 1 big onion roughly chopped
- 3 cloves garlic roughly chopped
- 1 tsp ginger roughly chopped
- 3 cups spinach leaves roughly chopped
- 1 cups coriander leaves
- 1/2 cup spring onion shoots chopped
- handful mint leaves
- 2 tbsp pepper powder
- 1 tsp cumin seeds
- 1/2 lemon
- 2 tsp flaxseeds
- 1 tbsp olive oil extra virgin
- salt as required
- 1-2 cups water
Instructions
- Wash and chop the green leafy vegatables and grind them together in a mixie along with 2 tsp of flaxseeds. Keep aside.
- In a pressure cooker or a cooking pot, heat olive oil and add 1 tsp cumin seeds
- Once they start sizzling, add the chopped onions and garlic cloves and give it a mix.
- When the onions become brown, add the chopped bottle gourd pieces and saute. Add a little salt and mix.
- Add 1-2 cups water and pressure cook for 3 whistles or till it is cooked. (you will get a beautiful smell)
- Now with the help of a hand mixer or grinder, blend the cooked bottle gourd till it becomes saucy in texture,
- Now add the blended green leafy vegetable mix to this mix and allow it to come to a boil. Add another cup of water if required (as per your preferred consistency)
- Add 1 tablespoon pepper powder and serve.
- To make this a complete meal add 1 ladle full of cooked millets or oats or serve it with wholewheat bread.
- Garnish with chopped spring onion shoots. Serve hot.
How long does the fibre rich green vegetable soup last?
If it doesn’t finish the same day, you can store it in the refrigerator for 4 days. Alternatively you can freeze the soup for up to 2 months.
