Cauliflower fritters or fried cauliflower recipe is a crunchy and spicy appetizer made with cauliflower, spices, flour and vinegar. The cauliflower florets are steamed, coated heavily with the prepared batter and then deep fried.
These fritters are very different from the famous Gobi 65 since the batter used here does not have yoghurt. But like any pakora or bhaji, these taste great with mint coriander chutney or tamarind chutney or even as a side dish to any Indian meal. Ofcourse it is best served with a cup of a hot tea.
The Lenten season always pushes me to make something new and tasty with vegetables. Last year it was mushroom vindaloo and this time it is this and my last recipe- healthy paneer cutlets. I have a foodie lot at home (and that includes me). So I enjoy making and developing new recipes as per their taste and liking.
If you are not very fond of cauliflower because of it’s smell then this recipe may just convert you with it’s divine scent that comes from the richness of it’s batter. My folks love it and whenever it’s prepared at home- all of it vanishes at one go.
So let’s get started with making this new version of the fried cauliflower recipe or cauliflower fritters or gobi pakora or whatever you call it at your place!
Indian cauliflower fritters or fried cauliflower recipe
Ingredients
For frying paste
- 10 red chillies (you can reduce as per your spice levels)
- 8 garlic cloves
- 3 inch ginger piece
- 25 small onions
- 2 tbsps fennel seeds
- 2 tbsps coriander seeds
- 4 tbsps all purpose flour (maida) or corn flour
- 4 tbsps rice flour
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 1 tsp lemon juice
- 4 tsps coconut oil or any oil of your choice
- salt to taste
- 1 tsp pepper
- 1 tbsp vinegar
For cauliflower fritters or gobi fry
- 300-400 g Cauliflower
- Water for blanching
- Oil for deep frying of your choice
- 3 green chilies slit
- 5 sprigs curry leaves
Instructions
- Blanch cauliflower florets in salted hot water for 5-7 minutes till they are almost soft. Keep aside.
- Soak the red chillies in hot water for 15 minutes. After draining the water, add this to a mixer/grinder along with garlic, ginger, small onions, fennel seeds and coriander seeds and grind them to form a coarse paste
- Now take a big bowl and add this course paste, along with turmeric powder, cumin powder garam masala, rice flour, all purpose flour (or corn flour), pepper, vinegar and coconut oil. The batter should be thick and well mixed.
- Add the blanched cauliflower florets and apply the paste on each piece such that it is well coated with the batter. Keep it aside for 5 mins till you heat up the oil.
- Now heat a good amount of oil in wide-mouth pan for the purpose of deep- frying
- Add the green chillies and one sprig of curry leaves into the oil and fry till they are crisp. Keep them aside on a paper towel.
- Now place the cauliflower florets one by one into the oil and deep fry till they are a crunchy brown.
- Keep the fried pieces on a paper towel to drain excess oil.
- Add the remaining batter (if any) to the oil and fry to get some crunchy pieces.
- Transfer all the fried pieces into a clean bowl. Check for salt and pepper. Now add 2-4 tbsps of vinegar over the pieces as per your liking.
- Serve with chutney or sauce or with thinly sliced onions.
