This healthy paneer cutlet recipe is a great addition to your evening snack menu or as a side dish. Mashed sweet-potatoes, spinach, gram flour make this combo a nutritious and delicious deal without having to feel even an ounce of guilt!
For the Indian vegetarian, paneer or cottage cheese is a favourite. Not only can it be made in different ways but it’s health benefits are known to everyone. A highly nutritive food, it is rich in calcium, lowest in fat (amongst all other cheeses), is loaded with vitamins A, B1, B3 and B6 and also fulfills the daily protein requirement for an average adult.
Paneer is one of the best options for keeping yourself feeling fuller for a longer time and is therefore advised by fitness experts and healthy food enthusiasts.
Usually when making cutlets or tikki, paneer is combined with potatoes, making it a complete meal to be quite frank. So I thought of making these cutlets absolutely healthy this time. I used sweet potatoes instead of potatoes and added some spinach leaves too. And instead of rolling it on breadcrumbs which is again refined flour, I used our very Indian gram flour (or besan) for a change. This was more of an experiment quite honestly but it turned out great and very tasty too!
The funny thing is I always imagined sweet potatoes to be unhealthy growing up because of the tag “sweet” but like many revelations that come after “marriage”, I realized that they are actually far nutritious than their “not so sweet” brothers! In fact sweet potatoes are a great source of fiber, antioxidants, vitamins and minerals which help maintain gut health, support healthy vision, enhance brain function and also support your immune system. What more? Boiled sweet potatoes are great for diabetes when eaten in moderation, due to their high fiber content.
Anyway I’m sure this healthy paneer cutlet recipe will make it’s way to your menu because of it’s simplicity and highly nutritious value.
So let’s get onto cooking this shall we?
Recipe for healthy paneer cutlet | cottage cheese croquettes
Healthy paneer cutlet recipe | cottage cheese croquettes with sweet potato and spinach
Ingredients
- 1.5 cups paneer or cottage cheese grated
- 2 medium sweet potatoes boiled and mashed
- 1 medium onion finely chopped
- 1 tsp ginger garlic paste
- 4 tbsp spinach leaves finely chopped
- 2 tbsp coriander leaves finely chopped
- 1 tbsp red chilli powder
- 1 tsp cumin powder
- 1 tsp chaat powder
- 1 tsp pepper powder (optional)
- salt (as required)
- 1/2 cup gram flour or as required
- 1 cup Rava or Semolina as required for coating
- oil for shallow fry as required
Instructions
- Take a large bowl and add all the ingredients except the masala powders and gram flour- one by one
- Mix well till they are nicely combined
- Now leave it closed for about 15 minutes. You will see that the mix has released little water because of the onions and leaves.
- Remove this water and use it for your other dishes
- What you will now have is a thicker mash of all the ingredients. Add all the masalas and incorporate well into this mash.
- Now add the besan or gram flour, little by little into this mix, till you're able to hold it together into a big dough.
- Grease your hand with oil and pinch a ball of this mash to form a cutlet
- Heat oil in a pan. Once hot, take the cutlet, dip it in a wide bowl of suji or semolina flour and place it carefully in the oil to shallow fry. Repeat for all the cutlets.
- Fry till they're golden brown on both sides
- Serve with sauce or mint-coriander chutney or as a side dish to your main course
Notes
- You may add any seasonal greens of your choice instead of spinach.
- If this seems spicy for you, just remove the masalas and add only pepper powder to this recipe.
- You may have to leave the mix a little longer to release the water in the ingredients.
- Adding corn flour or rice flour will make this cutlet even crispier.
- You may bake these croquettes instead of frying them.
