Quick and easy mutton soup pulav recipe

Simple and easy pulav recipe made with basmati rice and spiced mutton broth. The mutton soup pulav is a perfect meal for lunch or dinner and can be served with raita and papadam (papad)

Back in 2015, I really looked forward to my visits to Muscat (in Oman), to meet my husband. We were yet to get our family visa but being newly married, we longed to have some time together.

I still remember those days. Arun had many friends, all colleagues at his work-place. They were a close-knit gang and had had many adventures together.

One of their most peculiar practices was that whenever one of them got married, the new couple was supposed to host a feast to all of those friends, mostly bachelors. It was expected that the couple (rather the bride), would make the dishes at home.

I was inexperienced and apprehensive. “They just want some home-cooked food Rubitah. They’re not going to judge you.” my husband tried to encourage me.

There were about 25 friends. We invited them in batches of 6-8. I remember having many goof-ups those days- overcooked rice, undercooked vegetables, sometimes over spicy, or sometimes burnt etc.

Even though I had taken my diary of recipes that mummy had so affectionately put down for me, I couldn’t do a good job with any of them. I felt rather embarrassed and was sorry that I couldn’t create a good impression for my husband.

Then one day, when there was only one more batch to treat, mummy told me to make the Mutton Soup Pulav. “It is a one-pot recipe and cooks quickly,” she said.

So this time before serving it directly to my guests, I tried making it once beforehand.

It turned out nice. In fact, it was rather delicious!

A little more confident now, I cooked it again for my final batch of guests and they all appeared happy. I was sure about it because it finished quickly.

Since then I use this recipe whenever I want to make something like a biryani. It is quick and easy.

This recipe is called Mutton “Soup” Pulav because the rice in the recipe is cooked in the mutton broth, giving the final dish a rich mutton flavour.

It is truly awesome and you must try it!

Mutton Soup Pulav recipe

A quick and easy rice recipe cooked in spiced mutton broth

Equipment

  • pressure cooker or pot

Ingredients
  

For the mutton broth

  • 1/2 kg mutton pieces cleaned and marinated with salt
  • 2 tbsps oil sunflower or coconut
  • 3 onions finely chopped
  • 4 tomatoes medium sized
  • 6 green chillies finely chopped
  • 2" piece ginger finely chopped
  • 7 cloves garlic finely chopped
  • 7-8 peppercorns
  • 1/2 cup coriander leaves chopped
  • 1 tsp turmeric powder
  • 1 small lemon juice freshly squeezed
  • salt as required
  • 5 cups water

For the Pulav

  • 3 cups basmati rice
  • 1/2 cup ghee
  • 5 pieces cinnamon
  • 6 cloves
  • 5 green cardamoms

Instructions
 

For the mutton broth

  • Pour 2 tbsps oil in the pressure cooker or pot
  • Add the onions, ginger, garlic and green chillies together. Saute till lightly brown and the raw smell is gone.
  • Add tomatoes and saute well till they're mushy
  • Add the turmeric powder
  • Then add in the rest of the broth ingredients- coriander leaves, peppercorns, lemon juice and salt and mix well.
  • Add the mutton pieces
  • Pour in now 5 cups of water. Mix well.
  • Close the pressure cooker and cook for 3 whistles or till mutton is cooked
  • Separate the mutton pieces from the broth and keep the soup or broth aside.

For Pulav

  • Wash rice. Soak for 20 mins and then drain the water
  • Take 1/2 cup of ghee in the pressure cooker
  • Add the cinnamon, cloves, cardamoms and fry
  • Add the rice and fry for a while.
  • Add enough salt and the soup or broth we kept aside
  • Close the cooker and cook for 1 whistle. Remove from the flame.
  • After 5 minutes, remove the lid and stir in the mutton pieces. (The rice will not be sticky because of the mutton broth)

Notes

  • You can make the recipe with chicken or beef as well.
  • You can avoid the spices if you don’t prefer them.

Now when I use this recipe I make a good amount of the mutton broth, by just doubling the ingredients. I then use half the amount to make soups.
